Moqueca (Brazilian Seafood Stew)

Makes 5-7 servings

Ingredients

1 package of frozen shrimp, defrosted and peeled

1 cod filet

1 tb garlic power

1 tb cumin

1 tb paprika

1 tb chili powder

3 cloves of garlic, minced

1/2 onion, diced

Olive oil

1 red bell pepper, cut into medium-sized chunks

1 can of diced tomatoes

1 can of coconut milk

1 1/2 cup of chicken broth

Salt and pepper

Lime juice

Diced avocados, minced cilantro and a lime wedge to garnish

1. In a large bowl, marinate the seafood with the spices. Set aside.

2. In a large pot with olive oil, saute the garlic and onions over medium-high heat. Add in the seafood and cook thoroughly, for about 5-8 minutes. Take out the seafood and set aside. Cook the bell pepper for about 2-5 minutes.

3. Add in the diced tomatoes, coconut milk and chicken broth. Let the mixture simmer on low for about 15 minutes. Add the seafood back into the pot, and let it cook for another 10 minutes. Season with salt and pepper.

4. Serve with a bit of lime juice, cilantro, avocados, rice and a lime wedge!
