Nutty Chickpea Brownie Bites

Makes 24 brownie bites

Ingredients

10 tbs butter

1 cup granulated sugar

3/4 cup cocoa powder

1/4 tsp salt

2 eggs

1 tsp vanilla extract

1/2 cup chickpea flour

1/3 cup chopped pistachios (plus more to sprinkle on top)

About 1/2 cup almond butter

1. Preheat the oven to 350F. Line a 24 cup mini muffin tin with muffin cups, and spray with cooking oil. Set aside.

2. Fill a small pot 1/4th of the way with water. Place the pot over medium-high heat. Place a large heat-proof bowl over the pot, and add in the butter, sugar, salt and cocoa powder. Mix the ingredients together until the butter melts completely. The mixture will look and feel grainy.

3. Remove the large bowl from the pot and turn off the heat. Whisk the eggs one at a time into the batter. Mix in the vanilla extract. Fold in the chickpea flour until the batter becomes smooth. Fold in the chopped pistachios.

4. Pour the batter into the muffin tin(s) and top each brownie with a dollop of almond butter and pistachios. Bake for about 30 minutes, or until a toothpick comes out clean.
