Pad Gra Prow

Refined sugar recipe (Typically, Pad Gra Prow contains brown sugar)

Serves 4

Ingredients

1/4 cup oyster sauce

2 tbs soy sauce

2 tbs maple syrup

2 tsps fish sauce

1 shallot, sliced

Vegetable oil

2 tsps grated ginger

3 garlic cloves, minced

1-2 red Thai chili peppers (optional), chopped with seeds removed

1 pack or about 454g of ground pork

1 bunch of Thai basil, leaves only

1 red bell pepper, julienned

1 lime

White rice, cooked

4 eggs

Cucumber slices (optional)

1. Prepare the sauce: Mix the oyster sauce, soy sauce, maple syrup and fish sauce in a bowl. Set aside.

2. In a wok or large pan with about 2 tbs oil over high heat, sauté the shallot, ginger, garlic and chili peppers for about 40 seconds. Add in the pork and break it up - cook for about 5 minutes or until browned.

3. Add the Thai basil leaves and cook until the leaves have wilted. Add in the bell pepper and cook for about 1 minute. Add in the sauce. Adjust the sauce to your liking - you may add more oyster sauce if you want the sauce to be more saucier. Toss and stir fry for about 1 minute.

4. Fry the eggs or cook them sunny side up. Plate your Pad Gra Prow with rice, 1 egg per person, the pork stir-fry and the cucumber slices. Enjoy!
