Spinach Latkes
Makes 18-20
Ingredients
1/2 an onion
2 cups fresh spinach
1 garlic clove
6 large white potatoes
1 egg
1/4 cup all-purpose flour
Pinch of salt and pepper
Vegetable oil
Toppings:
Smoked salmon
Sour cream
Avocado
Pomegranate arils
Plain yogurt
Honey
1. In a food processor, blend the onion, spinach and garlic until mostly fine. Set aside.
2. Peel and grate the potatoes using the big holes of a box grater. Dry out the liquid using a kitchen or paper towel.
3. In a large bowl, combine the grated potatoes, onion-spinach mixture, 1 egg, the flour and a pinch of salt and pepper. Mix everything.
4. In a pan with vegetable oil over medium-high heat, pour about 1/3 cup of the latkes into the pan. After about 2 minutes, flip the latke. Make sure both sides are brown. Keep the latkes warm by transferring them into a baking tray with parchment paper, and place in the oven at 300F for about 20 minutes, or until ready to serve. (If you keep them in the oven for too long, they may burn).
