Chinese Almond Cookies
Makes about 20 small cookies
Ingredients
3/4 cup almond flour
1 cup all-purpose flour
1/4 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, chilled and cut into small cubes
1/2 cup white granulated sugar
1 egg + 1 egg for the egg wash
1/2 tsp vanilla extract (if you have almond extract, use this instead!)
Almonds (sliced or unsliced)
1. Combine the almond flour, all-purpose flour, baking soda and salt into a bowl. Mix. Set aside.
2. In a stand mixer or hand mixer, mix the butter and sugar, for about a minute. The mixture should be crumbly. Add the egg and vanilla. Mix until incorporated, for about 1-2 minutes. Add the dry ingredients and mix. The mixture should be a bit crumbly.
3. Line 2 baking trays with parchment paper. Roll the cookies into small balls, and press them down slightly with an almond piece. Refrigerate for 1 hour, or freeze for 15 minutes.
4. Preheat the oven to 325F. Make the egg wash by beating the other egg, and using a pastry brush, brush the tops of each cookie. Bake for about 25 minutes, or until browned.
