Banana Bread (Refined Sugar + Dairy Free)

Makes 1 loaf

Ingredients

2 over ripe bananas (plus 1 more to add on top - optional)

1/3 cup vegetable oil

1/2 cup maple syrup

1 tsp vanilla extract

1/4 cup coconut milk

2 eggs

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1 3/4 cups all-purpose flour

1/2 cup chopped walnuts (optional)

1. Preheat the oven to 325F. Spray a 9x5 loaf pan with cooking spray, and line the bottom with parchment paper. Set aside.

2. Smash the bananas in a bowl with a fork. Set aside.

3. Using a mixer or a bowl and a whisk, mix the vegetable oil, maple syrup, vanilla extract and coconut milk for about 20 seconds. Add the eggs and mix for about 10 seconds, and then add the smashed bananas and mix for about 20 seconds.

4. In a separate bowl, combine the baking soda, salt, cinnamon and flour. Stir, and then add the dry ingredients into the bowl of wet ingredients. Mix all together. Add the walnuts (optional) and mix all together.

5. The batter may be slightly clumpy from the bananas - that’s okay. Pour the batter into the loaf pan, and spread evenly. Add banana slices on top (optional).

6. Bake for about 50 minutes, or until a toothpick comes out clean.
