Open-Faced Chickpea Sandwiches

This is a great meal prep dish for lunches!

Makes about 4 servings

Ingredients

1 can of chickpeas

1 celery stick, diced

1 stalk to green onion, sliced

1 garlic clove

1/3 cup mayonnaise

1 tb mustard

Salt

Pepper

Microgreens and cherry tomatoes

Slices of bread

1. Wash the chickpeas and remove the skins. Set aside.

2. Grate the garlic clove using a microplane. In a large bowl, combine the celery, green onions, grated garlic, mayonnaise, mustard, chickpeas and a pinch of salt and pepper. Mix all together, while smashing the chickpeas with a fork.

3. Toast some bread, and top with the chickpea salad, microgreens and cherry tomatoes.
