Chicken Larb

Makes about 10 lettuce wraps

Ingredients

1 shallot or half a red onion, diced

2 garlic cloves, minced

2-3 tabs vegetable oil

1 pack of ground chicken

About 20 Thai basil leaves

1 red Thai chili pepper, sliced

2-3 tbs of soy sauce

1-2 tsps fish sauce

1-2 tbs of brown sugar or maple syrup

Juice from 1 lime

Bibb lettuce leaves

Shredded carrots

Lime wedges

Cilantro

1. In a pan with vegetable oil over high heat, sauté the shallots/onions and garlic for about 30 seconds.

2. Add the ground chicken and cook for about 5 minutes. Add the Thai basil leaves and Thai chili pepper, and cook until the basil leaves have wilted.

3. Add the soy sauce, fish sauce, brown sugar or maple syrup and lime juice. Stir fry for about 2 minutes. Adjust the sauces if needed.

4. Assemble the chicken larb - scoop a bit of the chicken mix into a lettuce leaf. Garnish with carrots, cilantro and a lime wedge.
