1-Bowl Greek Yogurt Chocolate Chip Muffins (Low Sugar)

Makes 12

Ingredients

1/4 cup white granulated sugar

1/4 cup honey

2 eggs

2/3 cups vegetable oil

1 cup Greek yogurt

1/4 cup milk

2 1/2 cups all-purpose flour

1 tb baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp vanilla extract

1 cup mini chocolate chips

1. Preheat the oven to 350F. Spray a muffin tray with cooking spray, and line with muffin cups. Set aside.

2. In a large bowl, combine the sugar, honey, eggs, vegetable oil, Greek yogurt, milk and vanilla. Whisk until smooth.

3. Add the flour, baking powder, baking soda and salt into the bowl with the wet ingredients. Mix until a batter forms and the dry ingredients have mixed through. Fold in the chocolate chips.

4. Scoop in the batter into each muffin cup. Bake for 20 minutes, or until browned and done on the inside.
