Potatoes Au Gratin

Makes one 9” x 9” baking dish

Ingredients

5-6 white potatoes, sliced

4 tbs butter

1/2 an onion, sliced

4 tbs all-purpose flour

2 1/2 cups milk

1 cup chicken broth

2-3 cups grated cheddar cheese

1-2 cups grated gouda cheese

Salt

Pepper

1. Preheat the oven to 375F. Spread some butter in a 9” x 9” glass baking dish. Set aside.

2. In a medium-sized pot over high heat, cook the onions with the butter. After about a minute, add the flour and mix until clumps begin to form. Add the milk and chicken broth. Adjust the measurements if needed.

3. Adjust the heat, and whisk the ingredients. The sauce should thicken. Add more chicken broth or milk to thin out the sauce if it is too thick. Add the cheese and whisk until melted.

4. Pour a bit of the sauce on the bottom of the baking dish. Add a layer of the potatoes, slightly overlapping. Add another layer of the sauce, and then the potatoes - continue this pattern until you reach the top.

5. Add more grated cheese on top, and then cover the baking dish with tin foil.

6. Bake for about 40 minutes, and then remove the tin foil. Bake for another 25 minutes, or until the the sides bubble and the cheese has browned on top.
