Breakfast Pita Pizzas
Makes 2 servings
Ingredients
2 Greek-style pita bread
1/4-1/2 cup cheddar cheese, grated
1/4-1/2 cup mozzarella cheese, grated
Pancetta or bacon
2 eggs
About 3-4 grape tomatoes, halved
Salt
Pepper
Olive oil
Avocado, sliced (for garnish)
Green onion, sliced (for garnish)
1. Cut the pancetta or bacon into small slices. Pan-fry until about halfway done. Put some paper towel into a bowl and place the pancetta/bacon on top to drain the oil. Set aside.
2. Preheat the oven to 375F and place parchment paper on a baking tray. Set aside.
3. Assemble your breakfast pita pizzas on the tray: Sprinkle the cheeses on top of the pita bread, while creating a hole in the center. Add the cherry tomatoes and pancetta/bacon around the center. Slowly, crack the eggs into the center of the pita bread. You may crack the eggs into a separate bowl before transferring them into the pita bread if you wish. Drizzle with olive oil around the edges and over the tomatoes. Sprinkle with salt and pepper, and bake for about 10-15 minutes, or until the eggs have turned “sunny-side up” in the oven.
4. Garnish with avocado slices and green onion.
