Chicken Adobo
Makes about 4 servings
Ingredients
4 chicken thighs
4 chicken drumsticks
1 cup soy sauce
1/4 cup white vinegar
2 cloves grated garlic
vegetable oil
1/2 an onion, diced
1 bay leaf
3 black peppercorns
1 small piece of ginger (about 1 tb)
3 garlic cloves
2 tbs brown sugar
1 1/2 cups water
Sliced green onion (to garnish)
1. Marinate the chicken with soy sauce, vinegar, and the grated garlic for at least half an hour or overnight.
2. In a skillet or pot, cook the chicken with vegetable oil on high heat, without the sauce. Do not discard the sauce! Cook the chicken on all sides until halfway done on the inside, for about 5-10 minutes. Remove the chicken, and then sauté the onions. Add the rest of the sauce, bay leaf, peppercorns, ginger, garlic, brown sugar and water. Mix until the brown sugar dissolves, and put the chicken back into the skillet.
3. Cover with a lid, and let everything cook on medium-low for about 20 minutes, or until the chicken is done on the inside. The sauce should thicken. If the sauce thickens too much, add more water.
4. Garnish with green onions and serve with rice.
