Mini Pumpkin Chocolate Chip Cookies
Makes about 34 small cookies
Ingredients
1/2 cup unsalted butter, room temperature
1/4 cup brown sugar
1/2 white granulated sugar
1 egg
1/2 tsp vanilla extract
1/3 cup pumpkin puree
1 1/2 cups all-purpose flour
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 cup of mini chocolate chips.
1. In a stand mixer or hand mixer, cream the sugars and butter together. After about 2 minutes, add in the egg and vanilla extract. Mix for about 1 minute, and then add in the pumpkin puree. Mix well.
2. Add in the flour, baking soda, baking powder and salt. Mix and scrap the sides of the bowl down with a spatula if needed. Fold in the chocolate chips.
3. Scoop out 1-2 tbs of the batter into small balls, and place them on baking trays with parchment paper. Preheat the oven to 350F. Freeze the cookies until the oven is done preheating.
4. Bake at 350F for 15 minutes or until browned.
