Cream Cheese & Fruit Galettes: 2 Ways!
Makes 8
Ingredients
3-4 figs, sliced
2-3 tbs honey
1 pack of pre-made pie crust (such as this)
1 egg
1 tsp milk
Powdered sugar
Fresh mint
For the cream cheese filling:
1/2 cup cream cheese, softened
1 egg
1/2 cup granulated white sugar
For the apple filling:
About 1/2 a Granny Smith apple, sliced
1/4 cup granulated white sugar
1/2 tb cornstarch
1 tb lemon juice
1/2 tb cinnamon
1/2 tsp vanilla extract
1. Preheat the oven to 400F. Line a baking tray with parchment paper. Set aside.
2. For the cream cheese filling, whisk all the ingredients into a bowl until smooth, and set aside.
3. For the apple filling, mix all the ingredients into a bowl and set aside.
4. Cut the pie crust using a small bowl as a “cookie cutter”. Use a knife to cut around the bowl. You should get about 3-4 round shapes.
5. Lay the cut-out pie crust circles on the baking tray. Scoop about 1-1/2 tbs of the cream cheese mixture into the center of each circle. Place the apples into some of the pie crust circles, and place figs and a drizzle of honey into the others.
6. Gently “close” the sides of the pie crust by folding them in one direction. In a small bowl, beat 1 egg and 1 tsp of milk, and brush the sides of the galettes. Bake for about 20-30 minutes, or until browned.
7. Let the galettes cool for about 15 minutes. Sift some powdered sugar on top, and garnish with mint. Enjoy!
