Fish en Papillote

Makes 1 filet

Ingredients

1 filet of cod or any other white fish

Salt

Pepper

1 tb white cooking wine

1-2 tbs olive oil

About 5 grape tomatoes, halved

1 tb capers

About 7 olives of your choice, cut roughly

2-3 cloves of garlic, minced

2-3 lemon slices

Parsley to garnish

1. Preheat the oven to 400F. Cut an oval shape out of parchment paper, and place on a baking tray. Set aside.

2. Place the cod filet on one side of the parchment paper. Season with salt and pepper on both sides. Drizzle with white cooking wine and olive oil. Top with the rest of the ingredients, except the parsley. Seal the parchment by creating folds along the edges, making sure the fish is sealed.

3. Bake in the oven for about 20-25 minutes. Unwrap the parchment paper, and then garnish with parsley.
