Lemon & Garlic Baby King Oyster Mushroom Scallops

Makes about 16 pieces

Ingredients

About 4-5 baby king oyster mushrooms

2 tbs butter 

1 tb olive oil

Salt 

Pepper

2 cloves of garlic, minced

1/2 cup vegetable broth

Juice from 1/2 a lemon

Minced parsley

1. Cut the mushrooms into large chunks, then score in a criss cross pattern on both sides.

2. Melt the butter in a pan over medium high heat, along with the olive oil. Sear the mushrooms on both sides and season with salt and pepper.

3. Remove the mushrooms. In the same pan, add garlic and let it cook for about a minute.

4. Add more butter and oil if needed. Add the broth, and then the lemon juice.

5. Put the mushrooms back into the pan. Let them cook for about 1-2 more minutes, then baste the mushroom scallops.

6. Garnish with parsley. Enjoy!
