Easy Turmeric Paella

Makes 1 large skillet

Ingredients
2-3 tbs olive oil
1 leek, sliced
3 garlic cloves, minced
1 carrot, diced
1 red bell pepper, diced
2 cups arborio rice
1 tb ground turmeric
4 cups chicken broth
2 tbs tomato paste
Pinch of salt
1 package, or about 30 raw shrimp (peeled and deveined)
Parsley to garnish

1. In a large skillet, sauté the leek and garlic over medium-high heat with olive oil, for about 1 minute. Add in the carrots and sauté for about 1 minute. Add in the bell peppers and sauté for 1 more minute.

2. Add in the ground turmeric and stir. Add in the rice, and stir - make sure the rice turns slightly yellow. Adjust the heat to medium-low. Add the chicken broth, tomato paste and salt. Stir everything. Adjust the heat to low and cover the skillet with the lid. Let everything cook for about 15 minutes on low.

3. Remove the lid and add the shrimp on top. Cover the lid again, and let everything simmer on low for another 10 minutes, or until the shrimp turns pink and the rice is cooked.

4. Top with parsley. Enjoy!
