Oven-Baked Zucchini Fries with Fresh Herb Dip

Makes 14-16 fries

Ingredients

Zucchini Fries:
1 large zucchini, cut into strips
1 cup flour
2 eggs, beaten
1 1/2 cups seasoned breadcrumbs
Olive oil

Fresh Herb Dip:
3/4 cups store-bought tzatziki
4-5 basil leaves
1-2 sprigs of parsley
1/4 tsp lemon juice
Pinch of salt

1. Preheat the oven to 375F. Line a baking tray with parchment paper and set aside.

2. Divide the flour, eggs and breadcrumbs into 3 separate bowls/plates. Dip the zucchini into the flour, then the eggs, then the breadcrumbs. Place the zucchini fries on the baking tray and drizzle about 2-3 tbs of olive oil. Bake for about 20-25 minutes, while flipping them halfway through.

3. In a food processor, blend the ingredients for the dip.

4. Serve the zucchini fries with the dip, and add garnishes if you wish. Enjoy!
