Homemade Flour Tortillas with Salsa

Flour Tortillas

Makes 8 tortillas

Modified from The Cafe Sucre Farine

Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

2-3 tablespoons extra virgin olive oil

1/2 cup warm water

1. In a large bowl, mix the dry ingredients. Create a well in the centre of the dry ingredients, and add in the oil and half of the water. Using a fork, slowly bring the dry ingredients together and mix. Add the rest of the water and combine.

2. Pour the dough onto a flat surface, and knead the dough. Divide the dough into 8 sections and form them into balls. Let them set for about 15 minutes.

3. Flatten the dough with your hands or rolling pin. Do not stack the dough on top of each other or else they would stick.

3. In a pan over high heat with oil, place the dough on the pan. After about 1-2 minutes, flip them over. Both sides should be brown.

Simple Salsa

Makes 2-4 servings

Ingredients

2 roma tomatoes, halved

1 garlic clove

1/4 onion

1 tsp lime juice

pinch of salt

oil

1. In a pan over high heat with oil, char the garlic, onions and roma tomatoes, for about 1-2 minutes.

2. In a food processor, add in the tomatoes, garlic and onions. Pulse for about 1 minute, or until almost well combined. Add in the lime juice and salt. Pulse for a few seconds more, or until the salsa forms.
