Mediterranean Meatball Salad

Makes 4-6 servings

Ingredients:

1 package of halloumi cheese, sliced

750g (1 package) of arugula

1/2-1 cucumber, spiralized or sliced

450 g mini heirloom tomatoes, halved

2-4 Avocados, sliced

Pomegranate arils

Red onion, sliced

Meatballs:

500g ground beef

1/2 cup breadcrumbs

1/4 cup parmigiano reggiano cheese

2-3 tbs Greek seasoning

1-2 tbs garlic powder

1 tsp lemon juice

6-8 basil leaves, chopped

1-2 tbs parsley, chopped

1 egg

Pepper to taste

Olive oil

Greek Yogurt herb Dressing:

1/2 cup plain Greek yogurt

1/2 cup mayonnaise

1 tsp garlic powder

1-2 thyme sprigs, leaves only

1-2 tbs parsley

1-2 tbs dill

1. Preheat the oven to 400F. Line a baking tray with parchment paper. Set aside.

2. In a large bowl, combine all of the ingredients for the meatballs with your hands. Roll the mixture into balls - you will get about 16 balls, depending on the size. place the balls on the tray and drizzle with olive oil.

3. Bake for 15-20 minutes.

4. In a pan of 1 tbs olive oil over high heat, pan fry the halloumi cheese until browned on both sides. This will take about 1-2 minutes per side. Set aside.

Dressing:

1. Finely chop the fresh herbs. Set aside.

2. In a bowl, mix the Greek yogurt, mayonnaise and garlic powder. add in the fresh herbs and mix well.

Assembly:

1. Get creative! You may add some lemon slices to garnish. Refer to the picture above for plating inspiration.
