Rapini and Salsiccia Pasta

Makes 4-6 servings

Ingredients

1 package of pasta (I used mezzi paccheri lisci), cooked

Olive oil

3-4 garlic cloves, minced

1 Italian sausages (salsiccia)

1 bunch of rapini, chopped

1 cup of reserved pasta water

1/4-1/2 cup heavy cream

1/2-1 cup Pecorino Romano cheese, grated

1. Remove the casings from the sausages, and cook the sausages in a pan over high heat with olive oil. Break up the sausages using a wooden spoon. After they’re fully cooked through, add in the garlic. Continue to cook everything until the sausages are slightly browned.

2. Add in the rapini, and cook for about 7-8 more minutes, or until the rapini has wilted.

3. Add in the heavy cream and let it simmer for about 40 seconds. Add in the pasta water and let everything simmer on low for 3-4 minutes. Add in the cheese, and let everything simmer again, for another 3-4 minutes.

4. Add in the pasta and give everything a toss. Garnish with more cheese on top. Enjoy!
