Caldo Verde

Makes 10-12 servings

Ingredients

Olive oil

4-5 garlic cloves, minced

1 onion, diced

3 potatoes, peeled and cut into small chunks

1 1/2 cartons of chicken broth

1 package of turkey kolbassa or chorizo sausage, cut into small chunks

3-5 cups fresh or frozen kale

1 bay leaf

Salt and pepper

1. In a large pot, saute the garlic and onions with olive oil over medium-high heat for about 2-3 minutes.

2. Add in the potatoes and let the potatoes cook for about 5 minutes. Stir the potatoes from time to time.

3. Add in the chicken broth and let everything simmer for 10-15 minutes on medium-low heat.

4. Add in the turkey, kale, and bay leaf, and stir. Let the soup simmer on low for another 15 minutes.

5. Season with salt and pepper. Remove the bay leaf. Enjoy!
