Heirloom Tomato Tart

Makes 1 tart

Ingredients

1 sheet of puff pastry

2-3 cups of heirloom cherry tomatoes, halved

1/4 cup pesto

1/4 cup goat cheese

2 tbs grated Parmigiano Reggiano cheese

2 tbs minced parsley

1 tb dried oregano

Pinch of salt and pepper

1. Preheat the oven to 375F.

2. Line a baking tray with parchment paper OR use the parchment paper that is provided in the puff pastry package. Unroll the puff pastry onto the parchment paper, and gently score around the edges to create a light frame. This creates a crust.

3. Lay the cherry tomatoes in the inner part of the puff pastry. Add dollops of pesto and goat cheese as well.

4. Bake for 20-25 minutes, or until the puff pastry has browned and the cherry tomatoes have slightly wrinkled.

5. Add the Parmigiano Reggiano cheese, minced parsley, dried oregano, salt and pepper on top.
