Feta Fattoush Salad
Makes 4 servings
Ingredients
Dressing:
2 tbs pomegranate molasses
1/3 cup olive oil
Juice from 1/2 a lemon
2 tbs freshly minced mint
1 tb sumac
Salt and pepper
1 head of romaine lettuce, washed and cut
4-5 red radishes, sliced
1 red bell pepper, cut into medium chunks
2 tomatoes, cut into wedges
1 cucumber, sliced
1 cup crumbled feta cheese
1 pita bread
1. Mix all of the ingredients for the dressing in a bowl. Set aside.
2. Tear the pita bread and lay them on a small baking tray with tin foil or parchment paper. Toast the pita bread in the toaster oven until slightly brown and crispy. Set aside.
3. In a large bowl, toss all the vegetables. Add in the dressing and toss. Top with the pita bread and feta cheese. Enjoy!
