Oven BBQ Ribs & Orzo Salad with Grilled Corn

Makes 4-6

Ingredients

Oven BBQ Ribs:

2 lbs pork back ribs

1/4 cup paprika

2 tbs chili powder

2 tbs onion powder

2 tbs garlic powder

2 tbs cumin

Salt and pepper

2 tbs olive oil

1 tb Worcestershire sauce

2 cups barbecue sauce (I used Stubb's Original)

Orzo Salad with Grilled Corn:

1/2 box, or about 2 cups of orzo pasta

1 cucumber, quartered

1 box, or about 15 grape tomatoes, halved

1 corn on the cob

1/2 cup feta cheese

1 tb lemon juice

2 tbs olive oil

Pinch of salt

1. Preheat the oven to 400F. Line a baking tray with tin foil. Set aside.

2. In a bowl, mix all of the spices, salt and pepper together. Season the ribs (back, front and sides) with the spice mix and bake for 25 minutes. Take out the ribs and increase the temperature to 425F.

3. In a bowl, mix the olive oil, Worchesteshire sauce and barbecue sauce togeher. Using a pastry brush, brush the sauce on the ribs on all sides. Place the ribs back into the oven and roast for another 10-15 minutes, or until done.

4. For the orzo pasta salad, cook the orzo according to the package. Rinse the orzo in cold water and drizzle with olive oil. Refrigerate for 45 minutes, or until chilled.

5. Pan-fry or grill the corn. Cut the corn along the sides and add it to the bowl of orzo. Add in the cucumber, tomatoes and cheese.

6. In a small bowl, mix the lemon juice, olive oil and salt. Toss with the salad and enjoy!
