Buckwheat Chocolate Chip Cookies

Makes 12-14 cookies

Ingredients

1 cup buckwheat flour

¼ cup gluten-free flour

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, room temperature

½ cup brown sugar

½ cup granulated sugar

1 egg

1 tsp vanilla

1 cup chocolate chips

1. Combine the flours, baking soda and salt in a bowl and set aside.

2. In a stand mixer or hand mixer, mix the butter and sugars together. Add in the egg and vanilla, and mix until combined. Add in the dry ingredients and mix until a batter forms. Fold in the chocolate chips.

3. Line a baking tray with parchment paper and scoop about 1-2 tbs of the cookie batter. Place the scoops onto the tray. Freeze for about 10-15 minutes. Preheat the oven to 350F.

4. Bake the cookies for about 10-15 minutes, or until done.
